After your white water raft trip this summer kick back and relax at Echo Canyon's full-service bar and grill, the Eight Mile Bar & Grill. Freshly prepared home-made meals, parent-pleasing kid's menu and a variety of beers on tap are just a few things you'll love about the restaurant's atmosphere.

What's on the menu?

Our restaurant manager is passionate about creating delicious and innovative meals using only the best fresh ingredients. Here are just a few of the dishes you'll have to choose from this summer... Be prepared to salivate!

~Black & Bleu Burger~

Been through the ringer? 8 oz. seasoned, crispy blackened beef patty topped generously with bacon, chipotle and bleu cheese!


~Fish & Chips~

Classic beer-battered cod, deep-fried to a crispy golden brown with a side of freshly squeezed lemon tarter sauce.


~Summer Chicken Salad Wrap~

Something cool and light for the palate. Chopped chicken breast, scallions, shredded carrot, cilantro and grapes mixed together with a light mayo, on a bed of fresh spring mix wrapped in a spinach tortilla.


~Bourbon Glazed Chicken~

Quartered chicken, pan-seared and caramelized in the oven. Served over roasted sweet potato chunks and wilted greens, glazed with an amazing bourbon reduction.


~Steak Dinner~

10 ounce cut of prime beef seasoned and grilled to your liking. Pan-seared cherry tomatoes with asparagus and garlic. Roasted small potatoes and a mouth-watering jalapeno lime butte!


~Pork Carnitas~

Slow braised cubes of pork shoulder smothered in our homemade green chile, next to black beans and corn, fresh sliced avocado, pico de gallo and warm tortillas.


~Navajo Fry Bread~

The original donut! 5 pieces of our special dough, deep-fried then sprinkled with cinnamon and drenched in sweet bee honey.


Why the name 8 Mile Bar & Grill?

Excellent question! When Echo Canyon River Expeditions got its start in 1978, the original owners, the Burches, purchased the current property which included the 8 Mile General Store. The Store was operated by the Dixon family who sold gold panning, hunting and fishing supplies and miscellaneous other Colorado 'curios'. The original store, now our retail store and guest check-in area, was built with the old timbers used as bridge planks on the famous Royal Gorge Bridge! The next time you're browsing our retail store look up at the old bridge plank-lined ceiling and you'll see silver paint drips; those drips came from way back when bridge workers painted the high tension cables above the planks of the bridge below.

When Andy Neinas purchased Echo Canyon some 10 years ago, he brought the same passion for preserving history. The expansion of Echo Canyon was based around the original 8 Mile General Store building and maintaining that same old-west look and feel which makes us who we are today.
